For this Red Plum coffee, ripe cherries undergo anaerobic fermentation for 48 hours before being depulped. A second fermentation with a culture medium containing microorganisms from coffee cherry skins and mucilage enhances the cup's red fruit notes. The coffee is washed using a thermal shock technique, starting with hot water to open the pores before rinsing with cold water, sealing in the flavor components.
